Function
Lysozyme can effectively hydrolyze peptidoglycan in bacterial cell wall, and the hydrolysis site is the β - 1.4 glycosidic bond between the 1-carbon atom of n-acetyl-cell wall acid (NAM) and the 4-carbon atom of N-acetylglucosamine (NAG). Peptidoglycan is the main component of bacterial cell wall. It is composed of Nam, NAG and peptide "tail" (usually four amino acids). Nam and nag are connected by β - 1.4 glycosidic bond, while peptide tail is connected to the third carbon atom of Nam through d-lactacyl carboxyl group. Peptide tails are connected by peptide "bridge" (peptide bond or a few amino acids). Almost all the cell walls of G + bacteria are composed of peptidoglycan, while only the inner wall layer of G-bacteria is peptidoglycan+ The cell wall of bacteria is stronger than that of G-bacteria.
Application
1. Preservation
